With my quite deep and let’s be honest, depressing look at my life recently, I thought today I would lighten the tone a little.
I want to share with you a recipe I love.
It is a recipe for Strawberry Ice-cream. Not just any ice-cream, but guilt free, not really ice-cream, ice-cream!!! It is a Weight-Watchers recipe, and therefore is low-fat, low sugar, but full flavour. As with all the recipes I love, it is a great one to adapt to be what you want from it, and it is made from ingredients that are usually in the house so doesn’t have to be thought about too much.
You will need –
300g Strawberries – or any other soft fruit – I use frozen which work just fine.
200g low-fat soft cheese – I use one with 75% less fat and its great.
250g greek yoghurt – choose a flavour that compliments the fruit you are using.
3 tsp vanilla extract
25g castor sugar
4 digestive biscuits – if feeling naughty, use chocolate ones!
Beat everything together apart from the fruit and biscuits. Lightly mash the fruit and fold into the mixture. Fold in the broken biscuits.
If you have an ice-cream maker, pour it as per the instructions, and you have amazingly light ice-cream that full of flavour.
If you don’t have an ice-cream maker, it’s still easy, but has to be planned a little earlier, as it takes a few hours to freeze. Pour it into a freezer safe container, and freeze for a couple of hours, remove and whizz with a blender, then return to the freezer. Repeat until it’s the consistency you enjoy.
